I'm so glad you posted this--I've been wondering it about it since the first post. BTW I am now absolutely addicted to making the Lahey bread--I served it at both my Thanksgiving dinners (one Thursday, one Friday) and everyone loved it, including my Italian-Canadian sister in law, who pronounced it "as good as Italian bread." I can die happy now.

Oh, it is a shame you haven't delved into the Book of Tarts. Not only is it eye candy, but he's done such a wonderful job job simplifying the recipes. . . I've learned so many great techniques from his book. And, my guests are always very happy.
